Ingredients:
1 tablespoon Olive Oil to fry
1 can of BPA free canned Red Kidney Beans
1 can of BPA free canned Butter Beans
1 can of BPA free canned tomatoes
1 large leek washed and chopped
1 celery stick chopped
1 large grated carrot
1/2 red capsicum chopped
1/2 cup of water
1 tablespoon of the star* ingredient Natures Earth Works Raw Chilli Sauce
1 flat tablespoon of Tahini
1/2 cup of fresh chopped parsley
1/2 cup of fresh chopped celeriac (optional)
1/2 cup of grated vintage cheddar cheese
2 heaped tablespoons of plain yoghurt
2 cups of plain organic corn chips
Salad on the side
1 tomato chopped
1/2 cucumber chopped
2 cups of iceberg lettuce finely sliced
A few slithers of red onion
Method:
In a large pot fry leek and celery stick in olive oil until see through
Add carrot, & capsicum, stir for a minute
Add washed and drained Kidney & Butter beans
Add canned tomotoes
Add the Star* ingredient Natures Earth Works Raw Chilli Sauce
1/2 cup of water
Bring to boil then simmer for 8 to 10 minutes stirring occasionally
Stir in tahini
Add parsley and celeriac (optional)
Serve with
Cheese and a dollop of yoghurt
Bowl of salad
Tips:
This meal is quick and easy and better for you than any franchise take-away.
Keep a few of the canned ingredients in the pantry. (Always make sure your cans are BPA free)
Eat corn chips in moderation.
